Chickens and Rabbits

Our Ameraucanas have started laying.  I’ll be honest, I gasped like a little girl when I saw the blue egg in the nest box on Sunday.  I may have even clasped my hands in front of my mouth.  Not my most macho moment.  But, you can see why.  They are stunning.

In rabbit news, our first litter of spring is growing like gangbusters, and Mamacita is due next week.  I’m feeling pretty good about it this time around.  She has been desparate to make a nest for the past week or so.  Every time I put hay in her cage, she would carry it to the corner, and start scrabbling wildly in an attempt to make a nest.  I finally relented and put a nest box in, just so she would settle down.  And she has.

    do they taste different from aldi’s eggs? from farmer’s market eggs?

    Honestly, we’ve only eaten the brown ones - the blue ones are just collecting in our fridge. I think they taste better - far richer and “eggier” than store bought. We’ve never sprung for organic eggs from the store, so I don’t know how they compare there. But they are way better than Aldi.

    jo, there is no way to tell the age of the eggs in the stores. the eggs that nathan has are much like farmer market eggs except he gets them and uses them immediately, so they are fresher - farmer market eggs may be up to 2 weeks old. the diff is also that you cannot wisk fresh eggs because they are so dense and rich. you need to break the yolks with a fork tip and then wisk with the fork. also, when you cracl them into a fry pan or bowl, the yolks stand straight up like big marbles and do not spread out like store-bought.
